Spinach & Tomato salad with Lemon Parmesan Dressing

Sometimes the simplest ingredients come together to make the most delicious food. This one here is a winner in flavours and looks.

Ingredients 

Spinach leaves, cleaned and roughly chopped
Firm tomatoes, diced
Parmesan cheese powder 
Olive oil
Lemon juice
Freshly ground salt & pepper

Method 

Whisk the Parmesan, olive oil, lemon juice, salt and pepper together till the mix well. 
Revive the spinach in cold water and then remove the water. Place in a bowl.
Add the tomatoes and then the dressing and eat cold. 
That's it!

Notes

You can use rocket instead of spinach and / or cherry tomatoes instead of normal ones
Add lemon zest for extra zing.
